Spaghetti with vegan Eggplant meatballs

 It is embarrassing to admit that twenty-five year old woman of Italian descent, but I have never seen The Godfather, until yesterday evening, that is. For many years, it has come to my attention that this is one of my serious shortcomings as a human being. As the time went, I knew that I would need to put on a real God father festivity to appease the classic film gods and Italians, I know that the celebrations: food. So, in order to compensate, I did most crucial Italian-American dish I could imagine: spaghetti and meatballs.


Traditional spaghetti and meatballs are made with three kinds of meat, beef, pork, and parmesan cheese. This, of course, not gel in the vegan diet. Faux meat products are divided into two categories: “look” and “tastes like.” Well, these meatballs hit the jackpot and achieve both, all without having to send me in my typical Italian food coma. This recipe is so good that it makes an offer to veganism can not refuse. In order to make it special, I did also my favorite tomato sauce, a recipe from the iconic Hamptons restaurant Nick and Toni ‘s. This sauce a little advance preparation demands, but it has a avdragets consistency and flavour that enhances everything it touches deep.

So having had a wonderful experience with The God the father, I was contemplating whether should look at the whole trilogy. Maybe this post a three part homage to the films via food. This will hopefully inspire you to have an Italian dinner and a movie night own!


Tomato Sauce


The recipe was for me Ina Garten show the Barefoot contessa, when she hosted Executive Chef Nick and Toni’s on her show.


2 tablespoons oil
1 onion, chopped
3 cloves garlic, minced
1 teaspoon crushed red pepper flakes
1 teaspoons fresh or dried oregano
1 cup vodka
2 28-ounce Tin whole tomatoes
Salt and pepper
2 tablespoons fresh oregano


Heat oven to 375. Add the olive oil in an oven proof pan and activate the stove to medium. Add onions and garlic and saut for 5-10 minutes. Add red pepper flakes and 1 teaspoons oregano and saut for another minute. Add vodka and boil until the liquid is reduced by half. Drain tomatoes and add them to the pan, squeezed in the fingers. Add salt and pepper. Cover with a lid and cook in oven for 1 hour. Then remove from oven and allow to cool for 15 minutes. Pour mixture in a blender and pur e. Back to the form, add the remaining fresh oregano and simmer briefly. Add your favorite pasta and enjoy!


Eggplant meatballs


3 tablespoons oil
1 Onion Diced
1 medium Eggplant unpeeled, Diced into cubes to inches
1 cup walnuts, toasted and coarsely chopped
1 teaspoon salt
Pepper
2 cups dried bread crumbs
cup firm tofu, pur ed
3 cloves garlic, minced
Zest of 1 lemon
Cup fresh Parsley, chopped
1 Tablespoon chopped fresh oregano
Cup basil, chopped


Preheat oven to 375. Heat 2 tablespoons oil in a large frying pan and saut onions in five minutes. Add Eggplant and salt and continue cooking for 10 to 15 minutes, or until Eggplant test is tender. About Eggplant sticks to the Pan and add more olive oil. In the meantime, toast walnuts in oven for 5 – 10 minutes and chop roughly. Add the Eggplant mixture and walnuts in a large bowl. Add a heaping Cup of this mixture to the food processor and pur e until smooth. Back to pur e to dish and combine. Add 1 Tablespoon of olive oil, bread crumbs, tofu, lemon zest, garlic, parsley, oregano and basil and mix well. Coat hands with a little olive oil and shape mixture into balls approximately the size of a golf ball. Place on a greased cookie sheet and spray lightly with a little oil. In the oven and bake for 25-30 minutes or until they develop a dark brown crust on the outside. Remove from oven, cover with foil and let steam for five minutes. Add at the top of your pasta and sauce.

Tomato and Chickpea Spaghetti

One of the greatest pleasures of my life are food, and my favorite meal is a huge bowl of pasta. There is something so nutritious and facilitate about threats and filling pasta with a variety of accompaniments. Pasta can often feel like an indulgence, because so many Italian restaurants rely on cream and meat based sauces. You can get half of your daily calories in lunch only say Pasta Pomodoro, or The Olive Garden. But it needs to be so. Pasta, especially of whole grain variety, can be a good source of fiber, and a willing because of slow simmered sauce full of delicious and wholesome ingredients.


This pasta dish was taken from my favorite food blog, the kitchen, who borrowed from New York Magazine, which presented the ultimate carbo-load of New York City Marathon runners. Don’t let this stop you. This pasta can be loaded with carbs, which is good for you, but also lean sources of protein in the chickpeas and lots of flavour from tomatoes and basil. Different textures, gives a unique satisfaction that I could not get enough of this was so good that I ate leftovers for breakfast the next morning. The original recipe calls for pancetta and parmesan, which I happily be omitted, and my own substitution of whole grain spaghetti, moved over this dish from a decadent into wholly virtuous. This weekend, if it is cold and rainy (or snowy) where you are, therefore, this dish a try. You will love it!


2 onion, sliced thin
2 tablespoons oil
1/2 teaspoon crushed red pepper flakes
2 cloves garlic, minced
1/2 cup of white wine
1 large diced tomatoes
2 15 oz cans chickpeas drained and rinsed
1 cup vegetable stock
1 bunch of basil leaves sliced
Salt and pepper to taste
1 pound whole wheat spaghetti


Heat the olive oil in a large frying pan. To the onions and saut until tender, about 5 to 10 minutes. The garlic and chili pepper flakes and saut for 1 minute more. Add the wine and simmer until almost completely absorbed.


Allocate 2/3 cup of chickpeas and place the remaining chickpeas in a food processor with vegetable stock. Pulse until the chickpeas are chopped.


Add chopped chickpeas, tomatoes and basil in a frying pan. A boil and simmer for 20 minutes. Season taste with salt and pepper. Meanwhile, Cook pasta according to the instructions. When the pasta is nearly complete, reserve 1 1/2 cups cooking liquid, and then clear. Add pasta sauce together with the remaining chickpeas. Throw, add pasta fluid if necessary. Serve immediately.
